Lemon Ricotta Blueberry Muffins

I love Gristedes. Because right when you need ONE lemon, they are all out of single lemons and you have to buy a whole bag. So Melissa and I decided to make Lemon Ricotta Blueberry Muffins. Yes, more warm weather food because we’re still in denial that the day after the first day of Spring, it snowed. We got the recipe here, but I substituted banana for the apple sauce.

Pea Pesto Crostini

A few days ago I saw a link on Cupcakes and Cashmere for this pesto. Then, the weather got warmer and the green color just seemed perfect for the fleeting spring weather. After a gorgeous walk through Union Square’s farmers market, I got the perfect whole grain baguette . . . and a bunch of pussy willow branches (not for the pesto). I may have gotten a little carried away with the whole spring thing, especially since it snowed two days later:-(

Chocolate Chip/Peanut Butter Oatmeal Cookies

Ok, I promise I’ve been eating and cooking healthier than this. After making lots of super healthy things (even for dessert), Mike convinced me to make something a little more decadent. And while these are certainly that, I may have fooled him a little bit about how sinful they are. Check out the recipe here (don’t judge me). Mine are kind of monsters compared to the Skinny ones. But, they also have a lot less sugar. Surprise, surprise – they don’t need much!
